Corvina
Corvina or Corvina Veronese is the main constituent grape variety of Valpolicella and Amarone, mandated to form between 45% and 95% of the blend. In this region it must be accompanied by Corvinone (of similar name but entirely unrelated) with possible additions of other varieties such as Rondinella, Molinara, Croatina, etc. Corvina can also be found in the DOCs of Garda and Bardolino.
Corvina grapes are known for their thick skins, which help protect them from rot and pests. They are also high in acidity, which gives the resulting wines a bright, fresh character. Like many of Italy's noble varieties it is a late ripener, often harvesting mid-late October. Despite its nobility it is seldom found outside of its homeland of Veneto.
