Corvinone
Corvinone is the main blending partner of Corvina in making up the grape blend of Valpolicella and Amarone. Its name would suggest that it is a relative of Corvina, and that was believed for a number of years until DNA profiling proved that these are unrelated and distinct varieties.
Corvinone has larger berries than Corvina, therefore, it is often found in higher proportions for the appassimento process of drying grapes, making Amarone and its sweet partner Recioto.
