Will Lowe is the founder of Cambridge Distillery: so far, the world's only Master Distiller and Master of Wine. Will has taken the concept of 'terroir' in wine and translated it into his grand passion of Gin. How this works, is to take fresh, not dried botanicals, locally sourced (and from afar when necessary), using vacuum distillation to extract the delicate flavours from each botanical.
This attention to detail allows the distillery to push the boundaries of new flavours and textures, (Ant Gin, for example). More than anything, keeping the balance of flavours is where the real skill lies. These are some of the most complex, fine Gins we have yet encountered.
