Dyfi Distillery Hibernation Gin 50cl
Hibernation Gin from Dyfi distillery is influenced by the native species foraged in the later seasons of the year. In this version, the botanicals used are: crab apple, blackberry, bilberry and lingon berry.
The spirit is aged for a while in a 100 year old white Port cask from Niepoort.

Dyfi Distillery is located in the Dyfi Biosphere on the edge of Snowdonia National Park and is owned and run by brothers Pete and Danny Cameron. The botanicals are all foraged from native species of plants grown in the biosphere and distilled with chill-filtration in their two 100 litre copper stills. They only do one distillation per week, and Noble Grape has been on their waiting list (yes, really) since October last year. Only now have we been able to secure some stock. These are extremely limited so we expect to sell out very quickly.
