Cabassou is the top red Bandol produced at Domaine Tempier. The vineyard is located at the bottom of La Tourtine where it has a warm microclimate, protected from the strong maritime winds of Le Mistral. The vines are minimum 60 years old, low yielding, and there is a higher proportion of Mourvedre in this cuvee than any of the other reds produced here, being at least 95% of the blend. Cabassou takes its name from the French expression 'ça cabasse' - roughly translates as 'gives a hefty punch'. It certainly is the most powerful of Tempier's reds, but it's not at all a heavyweight. More of a Bantam, we reckon, carrying no unnecessary bulk, but certainly has dense, powerful tannins for the long term.
