This wine from Arbois is a slightly younger version of the famous Vin Jaune from this region, the so-called 'yellow wine'. It is aged under a veil of yeast sealing the wine off from the air. The resulting wine is complex, but very much a specialised taste. A great accompaniment to the wonderful cheeses of the region
